Vegan Brownie

So I was pretty much 100% sure that you can not make a vegan brownie because the recipe I knew required 8 eggs and it is some what hard to replace eggs in cooking especially when half of the ingredients are made up of eggs. But a few weeks ago I was given a slice of vegan brownie from a local coffee shop and it was mind blowing, so realistic to the real thing. So on my quest to replicate it at home I am making a recipe that I read on another blog but have altered a bit because I never believe other peoples recipes. Oh yeah this is gluten free as well.
ok so you will need....
- 1 cup water
- 1.4 cups chana flour (the recipe I followed called for rice flour but I find it very gritty in baking so used chana or more commonly known as chick pea flour)
- 1/2 brown sugar
- 1 cup white sugar (the recipe said 1/2 cup of white but I like my brownie a bit sweeter)
- 3/4 cup coco powder
- 1ts salt
- 1 ts baking powder (the recipe also said 1/2 a ts for this too but I don't believe that so I put in 1 ts )
- 1/2 cup vege oil (this seemed like a lot but what the hell I tried it)
- 1 ts vanilla essence
- 4 ts home made plum jam (the recipe suggested 1 cup of chocolate chips but I like a brownie with a bit of fruity tang so used jam instead)

how to...
- bring the water to a simmer and remove from heat
- dissolve chana flour, sugar and cocoa in the water
- add the oil, salt, baking powder and vanilla and stir well
- pour in to a lined slice pan ( I used a 30cm ish pan but it was spread too thin so maybe use a smaller one)
- drop little bits of the jam on the top of the batter
- cook on 180*C for a little over 1/2 an hour.
- let it cool before cutting

the brownie did not rise very much even thought I added more baking powder, maybe next time I will double the recipe to make it thicker, or use a smaller pan. But it was very tasty and maybe next time I will try rice flour.
